I’m trying to clean out our freezer for 1/4 cow’s worth of beef that’s coming on Saturday. I had a pound of ground beef that I wanted to use but didn’t really have time to do anything fancy with it. So I threw it in the slow cooker with a can of whole tomatoes, some oregano and parsley (I would have used all Italian spices if I could find them), salt and pepper, and an 8 oz can of tomato paste. Then Ashar and I went to the park and two hours later we had pasta meat sauce! I had to chop it up a little bit but to be honest, the chunks of ground beef that didn’t separate just reminded me of meat balls. Yay!
1 lb of extra lean, free-range, organic, ground beef (or any beef if you really want but I support free-range animals!)
1 large can of whole tomatoes (or crushed tomatoes)
Italian spices (e.g., oregano, parsley, basil)
Salt & Pepper
8oz can of tomato paste
Throw everything except the tomato paste in the slow cooker on high for 2 hrs (or until cooked).
Go to the park
Return and add tomato paste
Prepare pasta of choice - I like penne or spirals so it’s easier for Ashar to eat.
